Challenge #25 – update

My challenge #25 is to cook all of the recipes from one cookbook. I feel like I have been doing this challenge for ages and ages. Of course, I feel like this because this is pretty close to the truth. The good news is that I have recently tasked this challenge with renewed enthusiasm and the start of 2019 has been full of new, exciting recipes to try.

Here are the dishes I have recently cooked:

Fennel, Banana and Fusilli Salad with Orange Yogurt Dressing

I made this but I didn’t eat it because I don’t like fennel. Luckily my partner loves it so he was the guinea pig for this recipe. I was very sceptical about the ingredients for this: Fennel? Banana? And Orange? Sounds like something out of a horror movie if you ask me but he liked it. I wouldn’t make this again myself because I don’t like the main ingredient but it was easy to put together.

Rice and Beans Burritos with Salsa

As I continue with this challenge, I am running out of enthusiasm to eat the things that I have made so this is another recipe that I drafted someone to help me eat it. My friend, Mark, was very appreciative that I was willing to bring him lunch in the form of a burrito and he didn’t seem to mind so much that it was going to be vegan. We both liked this. It wasn’t all that hard to make. In the future I think I would add some hot sauce to it or maybe another vegetable like sweetcorn to give it a bit more flavour but overall it was great.

Semolina slice with Apple and Pear Puree

I couldn’t find semolina anywhere it Switzerland so it was on the shopping list when I went back to the UK in December. I still can’t work out what type of food stuff it is? I think it is probably classed as a grain but it didn’t look like I thought it would when I opened up the packed and the semolina slices that I made didn’t look anything like the photos in the book and they seemed to crumble into pieces rather than staying in one big chunk. It tasted ok though and the apple and pear puree was surprisingly filling on a cold winter’s day.

Soy Gyros with Tzatziki

This is one of the favourite dishes that I have made. It had to marinate in spices over night in the fridge so it isn’t something that you can prepare in 20 minutes one evening. It was delicious and perhaps in the future I can make a smaller portion of it to have as a tapas style dinner with lots of smaller dishes to try rather than a big main meal.

Spicy Cream Cheese with Gherkins

You need to plan in advance to do this recipe as you need to let the yogurt drain for 12 hours and then let all of the ingredients infuse together for 4-5 hours. I was fairly convinced that I wouldn’t go through the hassle of making it again but I was so impressed with the result that I think I would. I ate this with a warm wholemeal roll but you could use it as a dip, spread or part of a sandwich filling.

Herb, Olive and Tomato Home-Made Rolls

These rolls were one of the best recipes in the book. It didn’t take that long to make, even though I had to kneed the dough for 10 minutes and leave the dough to prove. I was especially impressed by how they turned out because they actually looked like the photo in the book, which proves that there is a first for everything! I will definitely make these again. I think that they are also freezable which is good because I can make a batch in advance for lunch and then just get them out as I need them.

Vinaigrette

What can I say? It’s a salad dressing made from vinegar, olive oil and shallots. Not a lot to making it. The taste was good but I’m not a great fan of olive-oil based salad dressings.

Sour Cream and Parsley Dressing

This was easy to make but involved quite a bit of chopping before I could mixed everything together. I made it in advance so that the flavours could infuse a bit more before I ate it. I think that this could also be good as an accompaniment to grilled vegetables as well as a salad dressing because it was a thick sauce.

Indian Vegetable Pancakes

These were quite easy to make but the recipe didn’t make very large pancakes so I was glad that I made something else to accompany the dish. I could imagine that this would be a nice side dish to a curry as an alternative to a naan bread. Also the recipe wasn’t very spicy for me so next time I would definitely add the spices so that it matches my palate more.

Stuffed Vine Leaves with Lemon Rice

It took me ages to find vine leaves but I finally did. I was impressed by the results of this recipe. It was a bit time consuming to prepare everything but I think it was worth it. I didn’t really taste the lemon in the rice though so I might add more when I make it next time. And I will be making it another time because the jar of vine leaves was enormous and I don’t like wasting food. I have been looking for other recipes for vine leaves on the internet and, while most are recipes for stuffed vine leaves, I have found one which is with mushrooms and garlic with vine leaves that I will be trying out soon and is also vegan.

 

Buckwheat Pancake with Caramelized Apple Slices

We had this for breakfast even though they are in the dessert section of the book. I was surprised by how much of a rise the pancakes had. They were what I would describe as American-style pancakes, really fluffy and soft. I will definitely be trying these again. The book also suggest that you could have these pancakes with savory items, like onion and peppers, which I might give a go as well.

I have now made 91 out of 100 from the book which means that I only have 9 left to do. The end is finally in sight. My aim is to complete this challenge over the next few weeks, which can mean only one thing… we will be having Easter buns in January! I call this a dress rehearsal for the real thing.

 

 

V is for Victory (and Vegan) – Part II

As I mentioned yesterday in this blog post, I have now completed Challenge #14 on my #40Before40 list. Although the challenge is over, I will be continuing to eat vegan (at least part-time) for a while into the future. And these are the reasons why:1.If you have been following my blog for a while, you will know that I have been simultaneously this challenge along side my challenge to cook every recipe from a cookbook which is the 25th challenge on my list of #40Before40 challenges. I am about half-way through this challenge so there are still plenty more dinners, desserts and salads that I need to eat in order to complete this challenge as well. Come back soon to hear how I have been getting on with the latest recipes I have cooked.2. In order to celebrate my achievement, I will be having a vegan BBQ for some of my friends to enjoy some of the new recipes that I have learnt over the past few months. I really do think that this is an achievement. Before I started the challenge, I was a meat-eater and I went cold turkey for this challenge. (Possibly not the best turn of phase in the instance – perhaps cold tofu is more apt?) There will be some meat options at this BBQ party but more than 90% of the food will be vegan.3. I recently read an article on BBC about the growing rise of flexitarianism, which is people who eat vegan or vegetarian part-time. As my other half is keen to get back to eating meat (even though he has not gone hungry during this time), it seems like this would be a reasonable solution: I can chose to eat vegan but when we eat together we can eat meat and dairy products.4. I have lost quite a lot of weight during the past three months. I am a little worried that if I switch back to my diet from before that I will put all of the weight on again. However, I haven’t felt like I have been starving myself in the same way as I have felt when I have been on other diets. Being at least a part-time vegan would mean that I would be able to continue to control my weight.5. It may sound arrogant to say it but I know that this challenge has had a positive impact on the environment. I have been eating a lot more locally grown products. I won’t bore you with details about how much water, carbon dioxide and grain I have saved during this time. But there are lots of details about this on the internet if you are interest. This alone is motivation for keeping to a vegan diet for at least some of the time.6. I haven’t found it too difficult to refrain from eating meat. My Achilles heal is cheese. Living in Switzerland with the thought of not eating cheese during the winter fondue season would feel like Hell on earth for me. This is the reason why I chose to do this challenge in the summer months. So never having cheese again is not something that I could contemplate. If you hear news from Switzerland by the end of the week that there is a cheese shortage then you know that I have been making up for lost time!7. Being a vegan isn’t that bad. It can be tricky to eat out sometimes but more and more restaurants are catering for people with different dietary requirements. As I have said, I have never been hungry (apart from the very first week) and there are definitely lots of options, if you can plan ahead and are creative!Those are the reasons why I will be sticking with veganism for the moment. V is for Victory (and Vegan) – Part I

After 3 months or 13 weeks or 91 days, I have finally completed my 14th Challenge on my #40Before40 list. I have spent the last 3 months eating a vegan diet which means I have completely abstained from eating anything that is produced from animal products. That means no meat, no dairy products and no honey.

Rather than feeling relieved that this challenge is over, I am actually a bit sad. Although the challenge hasn’t been always easy (mainly when eating in restaurants), I have really grown to like preparing a lot of my meals from scratch and learning new recipes.

So, for the last time, here is what I have been eating this week.

Mastering Lentils

I have always struggled to cook lentils properly, which sounds a little bit strange because you just put them in a pan and boil them. But mine have always turned to mush and, although they have been edible, they haven’t had a really nice texture and don’t look good either. Thanks to my friend, Melina, I have now completely mastered the art of cooking lentils. Her advice to me was not to put salt in the water and it has worked a treat. I also read online that you don’t need to aggressively boil the lentils in the water, which I was probably doing the whole time. With the combination of these two gems of advice, I ended up with these perfectly cooked lentils for a salad this week. Finally!

Korean pancakes

Melina also gave me a packet of Korean pancake mix which is vegan (depending on what you add into it). I added some diced red pepper, spring onions, coriander and some garlic. The pancakes weren’t very round but I think perfection is overrated. They tasted good which was the main thing. I ate them with a spicy salsa dip that I made.

Pomegranate Debacle 

I had a recipe for a chickpea and pomegranate salad which I wanted to make. It seemed like it would be a nice alternative, especially as the weather is so hot and the recipe didn’t need any cooking. I have had pomegranate before but I have never bought one and prepared it myself. Perhaps there is a specific way that you should prepare it because I found it a complete hassle. I also found that whenever I cut into it juice would squirt out and all over the kitchen. By the time I was finished, the kitchen looked like it had been the location for the filming of a slasher movie. Also I was wearing a white T-shirt so that went straight into the washing basket as soon as I had cleared up the “blood” splatters! I did enjoy the salad but I think that I will be buying the pre-prepared pomegranate from the supermarket next time, even if it is a bit more expensive.

Amazing Homemade Sandwich

I made an amazingly good sandwich this week. It was so full of flavour and only took a few minutes to make. It was tomatoes, cucumber and a thin layer of vegan cream cheese, with a smoked tofu that had been cooked in a mixture of maple syrup, soy sauce and a pinch of chili powder. I will be making this again in the future!

Nearly complete!

As of today, I only have two weeks left being an official vegan. I took on the challenge of being vegan as part of my #40Before40 challenge. I must say that I am sad that the challenge is almost over. I have really enjoyed the challenge, even though there have been some difficulties along the way, and I would like to keep going with eating this way because I feel so much healthier and better about myself.

Here is what I have been eating over the past few weeks:

Date Night

I have been trying to introduce a Date Night because my boyfriend and I always seem to be doing things without the other and I thought it would be nice for us to take time for us to enjoy dinner together. Obviously, I chose the restaurant because it has mainly vegan dishes. I had already heard good things from a few people about Bebek. It is a Middle Eastern place in the centre of Zürich.

Brunching Disappointments

When I went to Lausanne to stay with my friend, we wanted to have brunch. We managed to find somewhere that was described as a vegan café. I managed to book a table for us online. We drove there, parked up the car and then found that the place was closed for that particular Sunday. We then had to do a rethink and ended up in a nice place called Blackbird.

The menu only had one thing that was vegan but the beauty of having a friend with you who is a native French speaker in the French-speaking part of Switzerland is a God send. She managed to get the waiting and kitchen staff to make me something that was vegan-friendly. However, they didn’t have anything sweet to eat so we went to another place where I had a fruit bowl called “You’re Kiwing Me”. Delicious!

Ben and Jerry’s Ice Cream

I haven’t had any ice cream since starting the challenge, although I have had a few sorbets. I noticed in one of the supermarkets that they were selling vegan Ben and Jerry’s ice cream. Ben and Jerry’s in Switzerland costs an absolute arm and a leg but as soon as I saw it, I had to have it. I must say that the taste wasn’t the same as normal ice cream. It wasn’t very creamy as you might expect because it is made from plant-based milk. I still enjoyed it though!

Missing out on Team Lunch

Last week are team lunch was at an Italian restaurant and I decided not to go. Nothing on the menu was vegan-friendly and, although there were salads that I could have asked to be made meat or cheese-free, I would end up paying the same price that was on the menu and not getting anything extra in its place. Paying 20 Francs for a few lettuce leaves and a bit of tomato seemed like a dumb investment. So, I went alone to Stripped Pizza (where I have been a few times already) so that I could enjoy a vegan pizza.

I haven’t had time recently to do a lot of my own cooking and the recipes from my vegan cookbook but I will be making myself busy in the next two weeks with more delicious vegan food.

Cookbook challenge

Thanks to my vegan diet challenge, my Challenge #25 of cooking every recipe from one cookbook is going well because I chose a vegan cookbook!

Here are the latest recipes I have made:

Almond and Cinnamon Drink

This was basically a smoothie and easy to make. It wasn’t all that special and I didn’t include the star anise in the recipe because I don’t like the flavour of aniseed.

Little Potato Cakes with Yogurt Dip

This was so easy to make and so tasty. I somehow managed to make about 3 times as many as the recipe said it would make and I though that we might be able to freeze some for another day. But nope, we ate them all in one sitting!

Roasted Chickpeas

This was a spicy snack and only took 20 minutes to bake in the oven. It was my idea to take these into work as a alternative to snacking on fruit and nuts in the office. However, they were so moreish that I ate them all soon after they had cooled down in the oven.

Soba Noodle Summer Rolls with Tofu and Coriander

I have only made spring noodles once before and that was on a Vietnamese cooking course that I went on last year. These are called summer rolls and not spring rolls because they are not deep-fried so they are a bit healthier. They were easy to make but a bit fiddly to get all of the ingredients in the wraps and wrap them up neatly. The recipe also suggested making a peanut butter dip made with soya sauce and agave syrup and was a nice accompaniment to the summer rolls.

Asian Noodle Salad

Making good on my promise to make and bring more of my lunches into work with me to save money, I made this Asian Noodle Salad. I didn’t use the specific noodles that the recipe stated. I used the soba noddles that I used for the summer rolls above. Our cupboards are so full of ingredients that I have had to buy to make one dish from this book that I am running out of space to put things. The salad itself was a nice alternative to a salad with lettuce and tomato and didn’t take long at all to make. The peanut butter dressing was ok but it turned a bit solid by the time I was able to pour it over the salad. I would definitely make this again.

Mexican Pepper Salad

Another lunchtime option (and we also had a portion of it with dinner one evening as well) that was very easy to make. Because the weather has been recently good in the last few weeks I was able to eat this outside in the sunshine. I’m not sure why this was a Mexican salad because I always associate Mexican food with spicy, hot food.

Quick Ajvar

This a Serbian roasted red pepper and aubergine relish. It’s really nice and spicy and goes well with toast or just on the side with vegetables. It really was quick to make – the vegetables are roasted and then puréed with oil and seasoning.

Colourful Little Toast Spirals

The quick ajvar was a main component of these. The ajvar is spread onto wholemeal bread that has been squashed flat by a rolling pin. The bread is then rolled up and baked in the oven for 15 minutes. It was a quick and easy snack to make and delicious too.

Sandwich spread

I was slightly nervous about this recipe. The ingredients (vegetable stock, rice cakes, onions and tomato purée) seemed a bit unusual to put together to make anything that would taste nice. However, I made some sandwiches with this spread and grilled vegetables. The mixture also kept well in the fridge so I could have it a few days later on bread or with vegan crackers.

Little Quinoa Balls with Mint Sauce

Like many of the things that I have made from this book, my creation looks nothing like the pictures in the book. In this case, I used multi-coloured quinoa whereas the book used the normal variety. The next problem with this recipe was that it said that the quinoa needed to be made into balls the size of tennis balls – I’m not sure then were the “little” part comes from. When I tried to move the balls around in the pan while frying them, they are started to disintegrate. I decided to make small burger-like patties so that they would definitely be cooked in the middle. It meant that I ended up with about 20 of these quinoa “burgers” which didn’t last for very long!

That’s 34 recipes out of a total of 100 already finished!

My week of vegan eating

Another week has again flown by and my vegan challenge is one week closer to completion.

More Supermarket Offerings

This week I tried a soya substitute on the grill that really did look exactly like a marinated chicken breast. I’m pretty sure that someone could pick it off the shelf without realise that it was vegan (apart from the huge Vegan symbol on the packaging!)

I’ve had hardly any sweet treats in the past 7 weeks but I spotted these in the supermarket this week, so I thought I would try them. They were surprisingly good, although the taste of the cola bottles wasn’t quite like the Haribo ones but I could certainly have these as a substitute and not miss the “real” ones.

Vegan-ising Recipes

I found a recipe for red lentils burgers but the recipe contained eggs to bind the mixture together. I had read that 4 tbsp of chickpea flour and 4tbsp of water is a substitute for one egg in baking so I replaced the egg and I made the burgers. The mixture made more burgers than I thought and I ended up freezing a few for another day. Here are the burgers before I cooked them:

Eating Out

As it was my turn to choose the restaurant for our Team Lunch this week so I took us back to Stripped Pizza where I went a couple of weeks ago with Araz and Mark. Everyone seemed to like the place, even though I was the only one of us to enjoy a vegan option.

Last weekend we had a Christening to go to because my boyfriend became a godfather. I was a bit worried about the meal to celebrate afterwards but I was delighted to find out it was a buffet. It meant that I was able to enjoy a lot of vegan options. Unfortunately all of the sushi wasn’t vegan and there was some amazing roast beef which was extremely tempting! However there was plenty of options for me and I didn’t go home hungry.

Weight Loss

This week my weight dipped under a certain number (which I can’t reveal as women don’t like to make their weight public) that I have been trying to dip under for about the last 4 years. Although this number isn’t my goal weight, I’ve been surprised by how easily I’ve lost week considering I haven’t been regularly exercising for the last 5 or more weeks due to a knee injury. In the past I have always tried to manage my weight through exercise and largely failed. It just goes to prove that you can’t out-train a bad diet.

Another week full of veggies

I’m now so into this challenge that it almost feels like I have been a vegan forever. It’s been a busy week and I haven’t had a lot of time to try new recipes so I’ve been reusing old recipes and eating soups, salads and grilled vegetables. Of course, I haven’t really been missing meat and dairy products, until I went home at the weekend…

Cheese cravings

When I went to South Asia last year, I was craving cheese on an hourly basis. I thought that I would be craving cheese a lot more by now and that I would have tried to make my own “cheese” from cashew nuts. But I’ve so far refrained. I also learnt that the local supermarkets stock a vegan mozzarella. It’s on the shopping list for next week already.

Who ever said that eating cheese made you have strange dream was totally off the mark. All cheese products must be out of my system by now and I’m still having dreams so weird that Sigmund Freud would be scratching his head at what my subconscious was trying to tell me.

Eating Out

I only ate out once this week – for our work team lunch. The menu wasn’t vegan-friendly so I had to ask for the roasted aubergine with tomato and potatoes without Feta cheese. It was a shame because a sprinkling of salty Feta would have made the dish sensational. However, my vegan-ised version was pretty good without it.

Going Home

I haven’t been home nor seen my family in the flesh this year so this long weekend we planned to go back for a visit. I was a bit nervous about telling my mum that I wouldn’t be able to eat animal products. But actually she has been scouring the supermarket aisles for vegan options. She now knows what tofu is but I can’t imagine this making its way onto her weekly shopping list.

I’m relatively sure that my mum had managed to buy one of every type of vegetable in the world for our 3 day stay. We could have had a vegetable festival and I was glad. Everything was delicious!

As I have mentioned before, I have been surprised by how supportive people have been about my challenge. This challenge has been so far made so much easier by the words of encouragement and understanding that have been thrown my way. So thank you so far!

However, I was severely tempted by English food. This sounds like an impossibility but when you grow up eating certain foods, you end up being very attached to them even if you know that some of them aren’t all that healthy or even all that tasty. Here is a list of things that almost tempted me to the dark side: sausage rolls, pork pies, roast chicken, bacon sandwich, everything in Pound Bakery, rice pudding… The list goes on. But I stayed strong and I am glad I did.

 

Compliments

As well as losing some weight, a few people have told me how well I look. I had read about people getting a “vegan glow”. I guess I must have it because people don’t necessarily say that I have lost weight but more that I look well. This does mean I have to learn to take a compliment better but that is a small price to pay for people to say that I look good!

Challenge #25

Challenge #25 is currently under way. This challenge was to cook every recipe from one cookbook. The inspiration for this came from a film called Julie and Julia, that I saw and is based on a true story. A bored New Yorker (Julie) decides to cook all 524 recipes from Julia Childs’ “Mastering the Art of French Cooking” in a year.

My challenge is not so daring. There was no way that I was going to choose such a long and complex book to cook but I thought it was an interesting challenge because: don’t we all have at least one cookbook at home that we have tried only a handful of recipes from?

Because I was new to being a vegan, I decided (with the persuasion of my friend, Stefan) that a vegan cookbook would be a book to chose. Then I could use recipes from book during my three months of being vegan. The book I chose is called Vegan on the Go. I don’t consider this cheating – I still have to cook all of the 100 plus dishes.

If you make a quick calculation, 100 dishes into 90-ish days means that I should be able to complete this easily in the time that my other challenge is running.

In practice, this hasn’t really happened. If I make a salad for lunch, I will make it to have for a couple of days. To cook 100 dishes while I am working full-time is also difficult because some of the recipes take a while to prepare. 14 of the dishes are desserts so these can’t be eaten for breakfast or lunch, even if I want to.

So, I will be cooking as many of the recipes in the coming months and then finishing off with the rest later.

Here is my progress so far:

Spinach and Banana Smoothie – I have had a lot of smoothies and this one was very similar to what I normally make. I did substitute the orange for grapefruit as we had this ingredient at home and needed to use it.

Guacamole – this is one of my favourites and the recipe was very similar to the one that I normally use.

Hummus – again I have made this a lot in the past and the recipe was almost the same as what I normally use.

Brocolli cakes with Mango and Avocado Salsa – I made these and put them on the grill and they were really easy to make. I was a bit worried that they would disintegrate during cooking but they didn’t. The salsa was delicious and I have made that again to have with grilled vegetables.

Gazpacho –  this took ages to make. I had to peel fresh tomatoes, deseed and core them. It took a long time and the kitchen looked like a bomb had gone off after I had finished. The result was good. It was the first time that I had even eaten Gazpacho. I enjoyed it, especially as we ate it on the balony in the sunshine.

Brocolli Cream Soup – in case you are wondering the cream in the soup was coconut milk, which does not come from a cow. Brocolli and Stilton is one of my favourite soups but this was a nice alternative. I would happily make this again and again.

Creamed Carrot Soup – again this was made with coconut milk. The recipe also had ginger in it which gave the soup a refreshing kick to it. Delicious!

Spicy Quinoa Chilli – I made this back in November last year. The recipe is basically the same as a chilli with meat but the meat is substituted with Quinoa. I made far too much of it and was eating it for about four days. It was a good job that it was nice or it would have ended up in the bin!

Panzanella (Italian Bread Salad) – I’ve made this a couple of times to take into work with me. It is so easy to make and so tasty as well. The receipe says to take the dressing in a bottle and then add it to the salad. I had to take an unused travel shampoo bottle with me because we didn’t have any small bottles to transport the dressing. Putting the bottle in the dishwasher was a mistake because it was too hot and the bottle melted a bit.

Sweet Potato Burgers with BBQ sauce – as I am yet to find a vegan BBQ sauce in Switzerland and I am not a huge fan of it anyway, I missed this bit of the recipe out. The burger was easy to make. The main ingredients were sweet potato, courgette and breadcrumbs. It really didn’t take too long to make. I now have to convinced my boyfriend that these are worthy of a regular place on our BBQ.

Sweetcorn frittatas with Mango Chutney

This was a bit messy to make. You have to salt and then squeeze water out of the courgettes which takes time. The actual making of the mixture was pretty straight forward and they were cooked quickly. I made a jar of the chutney because we had two large mangoes to use and I thought it would be nice to have with other dishes like a curry or on the side of a salad. I think I was heavy-handed with the curry powder but apart from that it was delicious. I served it with salad as well.

Asparagus Quiche – rather than make a one large quiche, I made four smaller ones so that I could take them into work. I cheated slightly because I didn’t make the pasty myself but used shop-bought vegan pastry instead. I should have added chillis to the filling but there weren’t any in the shop, so I used chilli flakes instead. I think the fresh chilli would have enhanced the flavour but it still tasted good.

Fruity Macadamia Cream – I made this back in November as well. I didn’t like the texture of it. Maybe I hadn’t blitzed the macadamica nuts enough but the others said that they liked it. I wouldn’t make this again, unless I had to.

One month down…

It has already been one month since I started my vegan challenge. The past four weeks have flown by (while I have mainly been in the kitchen preparing things to eat) As I predicted last week, I have now hit a plateau with my enthusiasm of trying new recipes. So, this week I haven’t many any new or exciting things to eat. Here is what my week was like…

Eating Out

I didn’t eat out at all this week because our day to go for a team lunch fell on a bank holiday. I was quite glad of this because we have already exhausted a hefty chunk of the restaurants that are within walking distance of the office.

Supermarket-bought sandwiches

I found myself getting really annoyed this week when the choice of sandwiches in the local supermarket was virtually zero at 12.10pm. I am pretty convinced that the meat-eating population are taking a few vegan sandwiches on the sly and leaving very little choice for vegans. Luckily, I spotted right at the back of the chiller a falafel burger, which I took with me to the park to eat. I like falafel. I like burgers. But I wasn’t convinced it was relatively dry, despite the huge serving of beetroot on the top of it, and took quite a bit of chewing. The weather outside in a little garden that I discovered last week made it palatable.

BBQ

Our BBQ game is still going strong and I think it will stay that way until the weather decides to change. Along with the usual suspects this week we have also grilled sweet potato. My boyfriend surprised me on Friday when I came home to homemade vegan spring rolls. He did confess that he hadn’t made these but that they were gifted to us by a friend of the family who owns and runs a Thai food stand. We didn’t cook the spring rolls on the grill but ate them outside with grilled vegetables and salad as the sun was setting.

Family celebration

My boyfriend’s dad had a birthday this weekend so the whole family went round for a dinner on Saturday afternoon. I was worried about how I was going to manage with the food aspect and offered to bring my own food with me. Apart from missing out on having a slice of birthday cake, I didn’t feel I was missing out at all. I actually felt really full by the end of the evening.

Weight loss

I had the feeling that I have lost a bit of weight. My boyfriend bought some scales because we didn’t have any. It turns out that I have lost more than a bit of weight – more than 5 kilos or 11 pounds (if you are imperially inclined). It was a bit of a shock, especially as I haven’t feel hungry or as though I have been denying myself for the last four week. And I have been out of action in a sporty sense because of a knee injury. So all of that weight loss has purely come from eating better. I have been trying for at least the last couple of years to lose some weight and it looks like I have managed it without even realising.

Just two more months to go!

3 weeks in

Three weeks in and my challenge is still going well. This week I ate out a total of four times (yes, four) and managed not to starve as well as go to a BBQ on a bank holiday. Here is my week in food…

Aubergine

If we are what we eat, I am dangerously close to waking up next week as a n aubergine. I have made Moroccan aubergine dip called Zaalouk, Aubergine Schnitzel, grilled aubergine, Aubergine Rollmops and a Turkish dish called Imam Bayildi- I’ve never been a huge fan of aubergine; partly because I have never known what to do with it apart from put it in a curry. But there are so many things you can do it. I might lay off in for a few weeks though before I create an aubergine shortage in Central Europe.

Recommendations

My friend Araz recommended the Turkish dish. My dear God it was so tasty and so simple to make. I will definitely be making it again and long after my challenge is over. Although I am definitely not going hungry on this diet, I’m always very open to recommendations so if you know of any vegan recipes please feel free to let me know!

Eating out

I had brunch with a writing friend. I was so jealous of her delicious bread topped with egg and cottage cheese. Thank god she didn’t order anything with bacon! I might have done or said something that I regretted. I had a delicious and healthy açai bowl full of fruity goodness, which was the only vegan option on the menu.

I had lunch during the week with the recruiter who placed me at my new job. He wanted to catch up and see how the first few weeks in the new place were going. Going to a very good Italian restaurant where they serve incredible but non-vegan pizzas and pastas for you to ask if you can have the goats cheese salad without the goats cheese was incredible difficult! I got a very strange look from the waiter but hey-ho, that’s life!

I also met a friend, who initially wanted to go to an all-you-can-eat pizza place. She was good about finding somewhere else to go instead. We went to a place called The Artisan which grows a lot of its own ingredients in the garden outside the restaurant and has a lot of vegan options. I had the vegan burger which came with homemade vegan cheese and a vegan ice cream. I was very happy when I left.

For team lunch, I suggested a Morrocan place where I had a nice salad and vegetable couscous. I am not sure if many of the other liked it but I definitely did. To be honest I was just happy to be able to have something off the menu.

May Day BBQ

The first of May was a bank holiday in Switzerland and I was invited to a BBQ. I was nervous about going because I would have to tell yet more people that I was being vegan “for fun” for a while. I was surprised that we had a interesting and funny discussion about my challenge (and the other challenges that I will be doing). I took along a sweet potato burger, sweetcorn frittas and mango chutney that I had made at home. Mark was very sweet and offered to cook my burger before the others so that I didn’t get the fat from the sausages, chicken and steak that other people had brought along. This was a crying shame because I was hoping that some of the flavours from the other food would make its way to my burger! Only joking! My food was delicious and for once I didn’t have food envy. I also go my very own vegan cupcakes to finish the meal that Stefan had made just for me!

Tied to the kitchen

I seem to be spending most of my weekend in the kitchen preparing and making things. I am enjoying trying new things but I’m not sure if I can carry on with such passion for the next 9 weeks. It would be nice just to grab something from the supermarket and warm it up. I also feel like I am taking a step back for woman-kind by spending so much time in the room that they have been trying to get out of. I have a line from Annie Lennox and Aretha Franklin’s Sisters are Doin’ It for Themselves (“They’re coming out of the kitchen and they’ve got something to say to you!”) on a constant loop in my head. But actually I’m really enjoying it so I will be staying there for the time being!
