Challenge #25 – update

My challenge #25 is to cook all of the recipes from one cookbook. I feel like I have been doing this challenge for ages and ages. Of course, I feel like this because this is pretty close to the truth. The good news is that I have recently tasked this challenge with renewed enthusiasm and the start of 2019 has been full of new, exciting recipes to try.

Here are the dishes I have recently cooked:

Fennel, Banana and Fusilli Salad with Orange Yogurt Dressing

I made this but I didn’t eat it because I don’t like fennel. Luckily my partner loves it so he was the guinea pig for this recipe. I was very sceptical about the ingredients for this: Fennel? Banana? And Orange? Sounds like something out of a horror movie if you ask me but he liked it. I wouldn’t make this again myself because I don’t like the main ingredient but it was easy to put together.

Rice and Beans Burritos with Salsa

As I continue with this challenge, I am running out of enthusiasm to eat the things that I have made so this is another recipe that I drafted someone to help me eat it. My friend, Mark, was very appreciative that I was willing to bring him lunch in the form of a burrito and he didn’t seem to mind so much that it was going to be vegan. We both liked this. It wasn’t all that hard to make. In the future I think I would add some hot sauce to it or maybe another vegetable like sweetcorn to give it a bit more flavour but overall it was great.

Semolina slice with Apple and Pear Puree

I couldn’t find semolina anywhere it Switzerland so it was on the shopping list when I went back to the UK in December. I still can’t work out what type of food stuff it is? I think it is probably classed as a grain but it didn’t look like I thought it would when I opened up the packed and the semolina slices that I made didn’t look anything like the photos in the book and they seemed to crumble into pieces rather than staying in one big chunk. It tasted ok though and the apple and pear puree was surprisingly filling on a cold winter’s day.

Soy Gyros with Tzatziki

This is one of the favourite dishes that I have made. It had to marinate in spices over night in the fridge so it isn’t something that you can prepare in 20 minutes one evening. It was delicious and perhaps in the future I can make a smaller portion of it to have as a tapas style dinner with lots of smaller dishes to try rather than a big main meal.

Spicy Cream Cheese with Gherkins

You need to plan in advance to do this recipe as you need to let the yogurt drain for 12 hours and then let all of the ingredients infuse together for 4-5 hours. I was fairly convinced that I wouldn’t go through the hassle of making it again but I was so impressed with the result that I think I would. I ate this with a warm wholemeal roll but you could use it as a dip, spread or part of a sandwich filling.

Herb, Olive and Tomato Home-Made Rolls

These rolls were one of the best recipes in the book. It didn’t take that long to make, even though I had to kneed the dough for 10 minutes and leave the dough to prove. I was especially impressed by how they turned out because they actually looked like the photo in the book, which proves that there is a first for everything! I will definitely make these again. I think that they are also freezable which is good because I can make a batch in advance for lunch and then just get them out as I need them.

Vinaigrette

What can I say? It’s a salad dressing made from vinegar, olive oil and shallots. Not a lot to making it. The taste was good but I’m not a great fan of olive-oil based salad dressings.

Sour Cream and Parsley Dressing

This was easy to make but involved quite a bit of chopping before I could mixed everything together. I made it in advance so that the flavours could infuse a bit more before I ate it. I think that this could also be good as an accompaniment to grilled vegetables as well as a salad dressing because it was a thick sauce.

Indian Vegetable Pancakes

These were quite easy to make but the recipe didn’t make very large pancakes so I was glad that I made something else to accompany the dish. I could imagine that this would be a nice side dish to a curry as an alternative to a naan bread. Also the recipe wasn’t very spicy for me so next time I would definitely add the spices so that it matches my palate more.

Stuffed Vine Leaves with Lemon Rice

It took me ages to find vine leaves but I finally did. I was impressed by the results of this recipe. It was a bit time consuming to prepare everything but I think it was worth it. I didn’t really taste the lemon in the rice though so I might add more when I make it next time. And I will be making it another time because the jar of vine leaves was enormous and I don’t like wasting food. I have been looking for other recipes for vine leaves on the internet and, while most are recipes for stuffed vine leaves, I have found one which is with mushrooms and garlic with vine leaves that I will be trying out soon and is also vegan.

 

Buckwheat Pancake with Caramelized Apple Slices

We had this for breakfast even though they are in the dessert section of the book. I was surprised by how much of a rise the pancakes had. They were what I would describe as American-style pancakes, really fluffy and soft. I will definitely be trying these again. The book also suggest that you could have these pancakes with savory items, like onion and peppers, which I might give a go as well.

I have now made 91 out of 100 from the book which means that I only have 9 left to do. The end is finally in sight. My aim is to complete this challenge over the next few weeks, which can mean only one thing… we will be having Easter buns in January! I call this a dress rehearsal for the real thing.

 

 

New Year in Belgium

We rang in the New Year in Brussels. Belgium is one of the European countries that I needed to visit as part of my #40Before40 challenge, and as we would normally be sat at home waiting for the New Year to arrive, it seemed like a good excuse to visit.

We had a total of three full days there, so we had plenty of time to see the sights and enjoy our time there. Overall, I thought Brussels itself was unimpressive and dirty. Admittedly, when you live in Switzerland, everywhere isn’t quite so nice in comparison. But we did get time to visit Bruges which is a beautiful city that we both enjoyed.

Here is what we got up to on our long weekend away.

Brussels

We (somehow) found ourselves in the Brussels Beer Museum at 10am sampling some of the local ales on the first day. There wasn’t a lot to see in the actual museum and I think the main attraction of the museum is the free beer that you can have after the tour. I certainly wasn’t complaining. And the surroundings were pretty cute as well.

After having a beer so early in the day, we also treated ourselves to one of Belgian’s most famous exports… no, it’s not sprouts! We went to one of the many fries restaurants in the city. I was expecting thin chips but the ones that we were served were more like chip shop chips from back home. I was impressed. It turned out that this “snack” was a staple for most of the trip and we are now certified Belgian chip experts.

We also went on a free walking tour, which are always worth the two and a half hours. We learnt a lot about the city, the history, the best places to eat waffles and the best place to drink beer. We also saw the Mannekin Pis, the small statue of the boy peeing and discovered that there are two other statues (minus the historical significance) in the city – a peeing girl and a peeing dog. Naturally we hunted down both of them to collect the set.

We sampled a lot of other beers in the local brassieres and bars, ate waffles, had some amazing moules et frites for our New Year’s Eve dinner and walked around the Christmas markets which were available until 6th January. We also went for a tour of the European parliament, which I found interesting considering events which may or may not be happening at the end of March, as well as a visit to a comic museum, which I thought was overpriced.

We did go in search of fireworks. We were told that there was a big firework display put on by the local government which was free to enter. The display was accompanied by music, DJs, food etc. The venue wasn’t in the city but a bit outside. After two police search we were inside and so were a lot of other people. The problem was that there were only two chip stands, one bar, one churros stand and a waffle van. The queue for the bar was about 200 meters long (no joke) and after a while we decided that it might be better for us to go back into town and find a bar to welcome in the New Year without fireworks because at least then we would be able to get something to drink and eat. So, that is just what we did.

Bruges

Bruges is less than one hour from Brussels if you take the direct train and I was so glad that we did because it is such a charming city. Its atmosphere is completely different to Brussel. It is noticeably cleaner and has lovely little canals and small streets and bridges to get lost in. It is also noticeably colder because it is near the coast.

Here we also took a free walking tour. I personally think the guide was the best guide that I’ve ever had on one of these tours. She was so passionate about the city, knowledgeable about the city and history and had a great sense of humour. She gave us some good hints about where to go and what to do and I was disappointed that we were only staying there for a day. I could have easily wasted hours sat in coffee shops, watching the world go by and eating fistfuls of chocolate.

img_3398We visited the Brugse Zot brewery and ate a very hearty lunch there before visiting the city hall, a beer museum and another brewery, where we tasted six of the beers on tap. After that we just had to try the chips to see if they were as good as the ones in Brussels and a waffle for dessert before heading back to Brussels and later heading home.

I’m glad we spent some time away for New Year. I would recommend it to help you ease back into the next year after an over indulgent Christmas.

It was doubly pleasing for me because now I have visited 27 countries in Europe! I now only need to visit another 13 countries to complete my challenge. With trips to Romania, Poland and Luxembourg planned for later this year (plus a few others), I should be able to complete this challenge soon.

 

Challenge #25

Another update about my #40before40 challenges! Brace yourself for a long post!

I completed my challenge to eat a vegan diet for 3 months at the end of July but I didn’t manage to cook all of the recipes in my vegan cookbook which is number 25 on my list. So the vegan eating has been continuing off and on over the past few months. Out of the 100 recipes in the book, I have now cooked 80 recipes. Which means that I only have 20 to go! The end is in sight!

Spicy Kale Crisps

This was easy to do and was intended to be a small snack. I didn’t really like the taste though to be honest. It was very bitter. But I can imagine that someone with a less sweet tooth than me would enjoy it.

Smoky Coconut “Bacon”

I don’t like coconut at all and I was hoping that the rest of the ingredients would mask the coconut-y taste but unfortunately it did. Needless to say that it wasn’t my thing. I am also very skeptical about any food that introduces itself with quotation marks. There is no way that that is going to be a true representation of the real thing is it?

Super Crunchy Almond Nut Balls

These tasted ok but they weren’t very crunchy. The recipe asked for firm nougat but I couldn’t find any that was firm, which probably why they were soft. I didn’t even know that nougat came in different forms of firmness so the likelihood that I would find some was always going to be almost zero.

Energy Balls with Choco Pops

These were much better than the Almond Nut Balls above. They weren’t so messy to make and they must have tasted good because they didn’t last long at all. I would happily make these again as a snack. I might have to make a bigger quantity next time because I think my boyfriend likes them as well.

Granny’s Pearl Barley Stew

I had to buy the pearl barley when I was in England one time because I have no idea what pearl barley is in German. I was really impressed with this. It didn’t take hours and hours to make as some stews can and it was tasty. I would happy make this again (and I sort of have to now that I have 400 grams of pearl barley left in the cupboard) as it is a perfect warming dish for the cold winter nights.

Speedy Yogurt and Walnut Dressing

Does exactly what it says on the tin. This was a nice dressing to go with salad or veggies. It didn’t take any effort at all (which is always a positive thing) and was delicious.

Soy Labneh and Pumpkin Seed Spread

This wasn’t very successful. We did manage to eat it but it was a strange consistency to it. I had to leave soy yogurt straining in a tea towel overnight and then squeeze out as much liquid as I could. Apparently this results in soy labneh. Perhaps I didn’t do this properly or squeeze it out as much as I should have. Either way it was far too much faffing about for my liking. I won’t be making this one again.

Hot “Cream Cheese” Spring Sandwich

Once again beware of foods in quotation marks. For the “cream cheese” I had to blend cashew nuts until they were smooth and use this as a spread for the sandwich which then had radishes, tomatoes, cress and spring onions added to it. For me the cheese was far too gritty and not a very nice texture.

BBQ “Pulled” Jackfruit Sandwich

I have read a lot of articles on the internet saying that Jackfruit is a great substitute for meat but I was a bit skeptical. It took me a while to find the ingredient itself but when I did I was really surprised by the outcome. The dish was filling and, although it wasn’t quite the same as eating pulled pork, it wasn’t too bad.

Tempeh Mayo Bagel

Before this challenge I had no idea what tempeh was. It’s fermented soya beans and originates from Indonesia. It looks quite weird and to eat it on its own is bland so you have to add as much flavour to it as possible. I wasn’t a huge fan of this recipe. It was easy to make but I just didn’t like the overall flavour. However, this could be because it was the first time I have had tempeh. I have had it since and quite liked it. In case you are wondering the mayo in the bagel was homemade and vegan!

Hash Brown Deluxe Sandwich

A bit messy to make because you have to spend hours peeling and then grating potatoes but I was happy with how this turned out and it did taste really nice. I mean it’s a hash brown in a sandwich – what is there not to like?

Focaccia with Spinach Hummus and Red Lentil Kofta

On more than one occasion I have been wondering why my version of the recipe doesn’t look like the picture in the book. I realise too late in this recipe that I had forgotten to blend the lentils after they had been cooked. This meant that it was even harder to roll up the lentils into balls before frying. Even so I don’t think that this altered the taste. I would do this again – and remember to blend the lentils!

Vegetable Wraps

The idea of this recipe was to use cabbage leaves instead of wraps for a low carb option. It was quite fiddly to do and it was hard to get the cabbage leaves wrapped around the filling without it falling out. The taste was good but I’d rather eat the carbs and run them off later than mess about with a cabbage leaf substitute.

Asian Glass Noodle Salad Wraps

We had most of the ingredients for this at home. It was quick to make and quick to eat as well. I would happily have this again.

Mediterranean Stuffed Tomatoes

Once I had found tomatoes that were big enough to stuff, I made this recipe. The filling was interesting – it tasted a lot better that I thought it would do when I read through the ingredients. This is in the book as a “Satisfying Main” but it wasn’t enough to fill me up so I had some grilled vegetables to accompany it.

Potato Risotto

This is one of the top 5 recipes that I have cooked out of the book so far. It was a bit time consuming because there was a lot of chopping and peeling to begin with but once everything was in the pan it cooked quickly. I wasn’t too sure about some of the flavour combinations (capers and sun dried tomatoes) but all together it tasted great and was really filling.

Spaghetti Frittatas

This was cooked spaghetti that was then baked in the oven until it crisped up. At least that was the theory. Mine didn’t crisp up. I think I might have added too many of the liquid ingredients. It was therefore hard to service and some of the sauce went everywhere. It reminded me of a carbonara and if I was going to do it again. I think I would not bother with the (unsuccessful) oven-baking and just have it as a pasta dish.

Spaghetti Pomodori e Olio

This is another dish in my top 5. It was easy to make and really delicious. Why can’t all the recipes in the book be as good as this one. Needless to say, I will be cooking this one again in the future.

Potsticker Noodles

I’m not sure that I bought the right noodles for this one. The book is very specific about some of the ingredients that are used. We had most of the ingredients at home for this one so the preparation for it didn’t take any time at all. The sauce was yummy and I think you could also this as a tasty marinade for tofu and vegetables before grilling. Big thumbs up!

Fried Rice with Pineapple and Cashew Nuts

This was a great lunch for me and my friend, Mark, a few weeks ago. Again most of the ingredients we had at home for this one so no special trip to the supermarket for this one. I had to caramelise the pineapple in vegan margarine first and I didn’t see the point of that to be honest. I don’t think it added that much to the flavour. Having said that the flavour was great and the recipe can be made to use up leftovers.

Chia and Almond Pizza

Having found good vegan pizza during my challenge, I wasn’t so happy about having to recreate this at home. However, it was great. I made this when my mum was staying with us and even she liked it! It is strange eating a pizza without cheese but you are probably saving a lot of calories as well.img_3704.jpg

Cinnamon Swirls with Cashew Maple Icing and Pecans

If this was a technical challenge on the Great British Bake Off, I would be telling the camera that I “really need to pull something out of the bag for the show stopper”! For some reason the dough was really wet and sticky and it was almost impossible to roll out even though I added a lot more dough and kneaded it over and over to try to save it. The result was some sorry looking pastry. Definitely no marks for presentation but they were devoured fairly quickly.

Super-Chocolatey Snacking Cake

This was another recipe that I made when my mum came to stay. This was more successful than the chocolate swirls. I wasn’t sure how the cake was going to rise without eggs etc but the substitute of sparkling water and baking powder worked a treat. I thought this might last a few days. It was gone in under 30 hours.

 

That leaves me with 20 recipes to do! In a rare mishap in planning, 6 of those recipes are desserts, including Easter Buns. It looks like Easter will be coming early in our house!

Reading matters

This year has been an excellent reading year for me. I have been trying for years to read more than 52 books (an average of one per week). It is the beginning of December and I have already read 61 books. Some of them have been shorter novels but I have also read some books that were longer. The longest one I have read was over 700 pages.

One of the reasons that I am reading like a woman possessed is because quite a few of my challenges for my #40before40 list involve reading. So by default I have been reading as many books as possible so that I can tick some more challenges off my list.

The twenty nineth challenge on my list is to read The 40 Books Every Woman Should Read. Some of the authors (all female) I haven’t even heard of before I started the challenge and I have been really surprised about how good some of these books have been.

Here are the books that I have recently read from the list:

The Thing Around Your Neck by Chimamanda Ngozi Adichie

This was a short story collection that is set in Nigeria or has character which have Nigerian heritage, where the author is from. I was quite surprised that a lot of the stories are set in really unusual situations which meant that the author was able to do a lot with the characters involved.

From my point of view, I thought that it was a bit too feminist for me. The stories mainly focus on women who are at the mercy of their male counterparts. Considering the background of the author this is understandable and I found it interesting to read stories that I normally wouldn’t choose to read.

A Visit from the Goon Squad by Jennifer Egan

This was the Winner of Pulitzer Prize 2011 but if I am being brutally honest, I am not sure how it managed to get this prize. The plot was interesting because it followed a group of characters who were interconnected because of their associations with music. One chapter was written as a Powerpoint presentation which I initially thought was a bit of gimmick but the chapter was surprisingly easy to read and I knew exactly what the author wanted to convey in the chapter.

The Bell Jar by Sylvia Plath

I didn’t read this as a teenager, which I think virtually everyone else in my school did and raved about until the end of time. Knowing what happened to Plath and how depressed she was during her life, I wasn’t keen to read anything that she had written. However, I didn’t find the book too depressing even thought there were depressive thoughts in there. Also some of the description was beautiful in a tragic sort of way.

The Color Purple by Alice Walker

I have tried reading this book before and given up because I wasn’t enjoying it but I was glad that I chose it for the challenge and persevered with it. The story deals with some difficult topics such as racism, abuse and sexism but it’s written well and is engaging. I know that it was turned into a film later starring Whoopi Goldberg and Oprah Winfrey but I haven’t got round to watching it yet.

The Joy Luck Club by Amy Tan

I really enjoyed this book. It was an interesting exploration about how much of our lives and personalities are influenced by our heritage, our family and what we experience during our lives. The descriptions of the many, many Chinese superstitions and beliefs were also fascinating!

Fun Home: A Family Tragicomic by Alison Bechdel

I read this in a few hours. This is a graphic novel. I have never read a graphic novel before but it was so interesting and easy to read. The novel is autobiographical and is about the death of the author’s father and the consequences of his death that reveal secrets that both parents have been hiding. Well worth a read.

The Age of Grief by Jane Smiley

I have been surprised by how many of the books on the list are short story collections. I was expecting most of the books to be novels. This book is a collection of short stories with a novella (up to 40,000 words). The short stories were well written and I managed to read them quickly. The novella was about the marriage and relationship of two dentist but written from the man’s prospective. I’m glad that I bought this book because I will definitely be re-reading it in the future.

Out of the total 40 books that I need to read on the list, I have already read 17 and I am looking forward to reading the rest.

The results are in…

Four weeks ago, I was sitting nervously in an exam room trying my best to prove that I could pass the C2 German exam. After being really sick the week before, I was just glad to be able to make it to the exam room and take the test.

Today I got the results. There is good and bad news. The good news is that the modules that I passed I got good marks in. The bad news is that the module that I didn’t pass I was only short one mark. One measly mark. Personally I think that they should have rounded up the total so that I could pass.

I knew that this module was hard because the examiner had also commented to us that she wouldn’t have been able to answer all of the questions correctly. I was expecting not to do so well in this and I also thought that I might have to resit it.

So resitting this is exactly what I am going to do. If I can only just fail when the questions are hard, I am confidence that I will pass with flying colours when the questions are a bit easier. I think that they vary how hard the modules are so I am banking on the resit being much easier than the original exam.

Of course, I don’t have to resit but it would be nice to get the full certificate and, more importantly, the first thing to do on my #40Before40 list is to pass the C2 German exam. It is annoying that I didn’t manage to get every module passed in one time but that’s life.

Fingers crossed for the end of January when I will be back in an exam room once again.

Challenge #8 – update

Challenge number 8 on my #40Before40 is to watch all of the 250 Top Films as rated on iMDB.

I have now watched 120 out of 250 films, which means I am almost half way to the finish line!

23. The Silence of the Lambs

I thought that I had seen this before but I obviously hadn’t because the opening scenes were what I thought were the closing scenes. It wasn’t as scary as I thought it would be but I now know why the book version that my Dad used to have on his bedside table showed a person with a moth over the mouth. This hasn’t done anything for my moth-phobia. I thought the plot twist at the end was a little bit predictable but otherwise it was relatively enjoyable.

27. Léon: The Professional

This was the story of a professional hitman, who takes a orphaned girl in after her family have been brutally murdered. He teaches her how to make a hit but when she decides to kill the people who murdered her family things start to go round. It was action-packed, although the ending was a little bit predictable.

29. Spirited Away

Only one word can describe this film – weird! It was a Japanese Anime and I wasn’t sure what was going on most of the time. A girl is transported into a parallel world where her parents have been turned into pigs. She has to work in order to free them and return back to reality. It was confusing and surreal to watch. I just didn’t get it.

32. Interstellar

I have so many questions about the movie plot that I still don’t understand. The basic premise is that NASA is searching for other planets for the human race to escape to because nothing grows on the earth any more apart from corn. I was kind of with the plot until there is a long exploration of time being a non-linear concept. At this point it just became a bit too surreal for me. I don’t know why this film is so high on the list. It was ok but I didn’t think it was incredible.

34. City Lights

This is the first silent movie I have ever seen. It stars Charlie Chaplin as a tramp who falls in love with a blind girl. I found it really funny but sometime a bit predictable because the jokes have obviously been stolen and rehashed over the years. It also amazing how you don’t need dialogue to understand what is going on throughout the film.

37. The Intouchables

This is a French film (I watched it with subtitles) and is based on a true story. It’s about a carer and his patient who is an incredibly intelligent man but is paraplegic. At some parts of the film, I was howling with laughter. It was incredibly real and the end was heartwarming. It is to discover films like this that I would never watch normally.

38. Modern Times

Another Charlie Chaplin film on the list. I like that the characters in his films don’t have any name; he is just called “the Tramp” or “the factory worker”. Half of the time I don’t remember the characters in a film once I have watched it. The story is about a factory worker who has a nervous breakdown and then accidentally gets sent to jail when the police wrongly think that he is the leader of a protest. Like City Lights, I liked the jokes and the slapstick comedy.

42. Rear Window

Another Hitchcock film on the list and one of my favourites of his so far – there are quite a few Hitchcock films on the list. The story is set in an apartment block. The main character, played by James Stewart, is recuperating from a broken leg and spends all day watching the neighbours come and go. Things take a drastic turn when he witnesses a possible murder in an adjacent flat. I also spotted Hitchcock’s cameo when he was winding up a clock in an apartment when he was playing a butler.

45. Whiplash

I had no idea what this was going to be about – possible someone suffering with the after effects of a car accident and was thinking of suing? Thankfully it was about a young drummer trying to break into the music industry and his relationship with his mentor. It explores the fine line that exists between trying to nurture talent and the consequences when someone is pushed to their limits. It had a very moral and ethical undertone to it.

47. The Prestige

Another film that I have never even heard of on the list. It’s the story of the rivalry of two magicians. It’s one of those films that you could re-watch to get all of the clues about how the story will unfold. I had managed to pick up most of the clues but it was only right at the end that I had the “A-ha!” moment. Highly recommended if you haven’t seen it!

79. Requiem for a Dream

Three words to describe this film: weird, weird and weird. It explores the relationship that four people have with drugs, though not all of them are illegal drugs. It is shot in a dream-like manner where reality and fantasy overlap each other. I still don’t know how I feel about the film as a whole. The ending was abrupt and left me wanting to know what would happen later to the characters, although there is an overwhelming sense that the characters are all trapped and they won’t be able to achieve the dreams and the lives that they were hoping for.

94. The Sting

This was a film about some conmen and the elaborate sting that they set up. I couldn’t really get into it. It seemed a little bit outdated when you have seen the Ocean’s series. The best thing was Robert Redford’s dapper pin-striped suit and matching hat.

104. The Hunt

This is the story of a teacher, who is falsely accused of child abuse by his best friend’s daughter. Halfway through I was wondering what this had to do with “The Hunt” but the title of the film has a double meaning but you only find that out at the end of the film. An interesting portrayal of something that often happens in our society.

156. Dial M for Murder

A man blackmails a friend to kill his wife but it all goes wrong and the police soon suspect that he is to blame but proving it is difficult. Another Hitchcock’s film but not one of the best of them, in my opinion. I did think this was the best cameo role that Hitchcock plays.

197. The Grand Budapest Hotel

I have been avoiding this film for a while but I think it’s because I was mixing it up with the film with a similar title. It is one of the best films that I have seen in a long time, even though it had Jude Law in it. It’s all about a valuable painting that is inherited by a hotel employee and the family of the deceased trying to steal it back. Funny, strange and wonderful all at the same time.

182. Into the Wild

Another true story in the list about a young man who leaves his family and hometown without a word because he doesn’t want to live according to society’s rules. He survives by moving from place to place earning enough money to get by and learns how to hunt and fend for himself off the land. He also visits Salvation Mountain which I did a few years back. I remember our tour guide saying that it was featured in a film and since then lots of people have come to see it.

243. In the Mood for Love

This was set in Hong Kong and Singapore and was mainly in Cantonese so it was lucky that I was able to get the film with subtitles. It’s the story about two neighbours who realise that their spouses are having an affair with each other. Even though they both have feeling for each other as well after becoming friends, they find it difficult to act on their emotions because they don’t want to be cheaters, despite the actions of their partners. It’s an interesting movie and I thought the music was interesting as well.

V is for Victory (and Vegan) – Part I

After 3 months or 13 weeks or 91 days, I have finally completed my 14th Challenge on my #40Before40 list. I have spent the last 3 months eating a vegan diet which means I have completely abstained from eating anything that is produced from animal products. That means no meat, no dairy products and no honey.

Rather than feeling relieved that this challenge is over, I am actually a bit sad. Although the challenge hasn’t been always easy (mainly when eating in restaurants), I have really grown to like preparing a lot of my meals from scratch and learning new recipes.

So, for the last time, here is what I have been eating this week.

Mastering Lentils

I have always struggled to cook lentils properly, which sounds a little bit strange because you just put them in a pan and boil them. But mine have always turned to mush and, although they have been edible, they haven’t had a really nice texture and don’t look good either. Thanks to my friend, Melina, I have now completely mastered the art of cooking lentils. Her advice to me was not to put salt in the water and it has worked a treat. I also read online that you don’t need to aggressively boil the lentils in the water, which I was probably doing the whole time. With the combination of these two gems of advice, I ended up with these perfectly cooked lentils for a salad this week. Finally!

Korean pancakes

Melina also gave me a packet of Korean pancake mix which is vegan (depending on what you add into it). I added some diced red pepper, spring onions, coriander and some garlic. The pancakes weren’t very round but I think perfection is overrated. They tasted good which was the main thing. I ate them with a spicy salsa dip that I made.

Pomegranate Debacle 

I had a recipe for a chickpea and pomegranate salad which I wanted to make. It seemed like it would be a nice alternative, especially as the weather is so hot and the recipe didn’t need any cooking. I have had pomegranate before but I have never bought one and prepared it myself. Perhaps there is a specific way that you should prepare it because I found it a complete hassle. I also found that whenever I cut into it juice would squirt out and all over the kitchen. By the time I was finished, the kitchen looked like it had been the location for the filming of a slasher movie. Also I was wearing a white T-shirt so that went straight into the washing basket as soon as I had cleared up the “blood” splatters! I did enjoy the salad but I think that I will be buying the pre-prepared pomegranate from the supermarket next time, even if it is a bit more expensive.

Amazing Homemade Sandwich

I made an amazingly good sandwich this week. It was so full of flavour and only took a few minutes to make. It was tomatoes, cucumber and a thin layer of vegan cream cheese, with a smoked tofu that had been cooked in a mixture of maple syrup, soy sauce and a pinch of chili powder. I will be making this again in the future!
